Project Description Narrative:
Nutrition security, or consistent access to nutritious foods for optimal health and well-being throughout life, is a growing global health focus. Poor nutrition is a leading cause of a variety of health issues, as well as healthcare costs and lost productivity in the U.S. and around the world.
Access to healthy and affordable food can be challenging for those living in rural areas. In Eau Claire County, 40% of residents live in rural settings where supermarkets don’t exist and there are higher rates of obesity and food insecurity.
This project will produce a health equity-conscious assessment to address nutrition security in rural Eau Claire County. The assessment will identify the causes of disparities in nutrition and chronic diseases or residents, as well as strategies to improve nutrition security and promote health equity.
